carrots, zucchini, squash, mushrooms and napa cabbage all sliced into matchstick sized portions (3" long). the rice paper was soaked in room temp water (20 seconds each side or until very flexible). lay out the rice paper and pile the veggies in the middle. i just used lemon pepper to season but there are other options using rice wine vinegar and sugar (not my thing). You can add shrimp or chicken to add protein. Roll them up by alternate sides and eat. they will be a little tacky to the touch

sauted leftover veggies seasoned with rosemary, cayenne pepper and a littke salt topped with two eggs. Enough to last a couple days

I dont eat much dairy but this is my go to when im craving calcium. Plain greek yogurt, blueberries, 1/2 cup gluten free oats, small handfull of almonds and a pinch of cinnamon. quite filling and very healthy

Grilled chicken with a yummy salad. Most of the items came from my garden such as the tomatoes, cabbage and cucumbers 👌🏼The chicken is lightly seasoned with lemon pepper and grilled to perfection. I take them off the grill a little early and wrap them in foil to the juices reconstitute keeping it juicy.
